Twice Baked Potato Bites



  24 small red potatoes
1/4 cup butter,melted
1/4 cup sour cream
1/4 cup grated cheddar cheese
4 slices bacon, cooked crisp and crumbled very fine
small amount of milk
Kosher salt
Olive oil
additional grated cheddar cheese for topping(optional
diced green onions (Optional)



  Wash potaotes, toss with small amount of olive oil and kosher salt. Place on baking sheet and bake 30 min at 350. Remove from oven and cool. When cool enough to handle, cut potatoes in half and scoop out most of the inside, leaving a thin shell of potato in the skin. Mash potaotes with butter, sour cream, cheese, bacon and enough milk to make a soft filling. Spoon or pipe the mixture into the potato shells. Top with additional grated cheese if desired. Bake at 350 for 10 min or until mixture is bubbly and cheese is melted. Remove from oven and top with green onions. Serve with additional sour cream if desired.
