Apricotand Walnut Applesauce Cake



  6 oz dried apricots (approximately 1 cup)
1 1/2 cups walnuts, chopped
2 cups flour
1 teaspoon baking soda
1 1/4 teaspoon baking powder
1 1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup butter
1 1/2 teaspoon vanilla extract
1 cup sugar
2 eggs
2 cups unsweetened applesauce


  Preheat oven to 350. Butter a 9 cup loaf pan (10 x 4 x 3). Dust pan with dry bread crumbs or wheatgerm.

With scissors, cut apricots into slices ¼" wide. Sift flour, soda and cloves together. Sprinkle 2 to 3 teaspoons of the dry mixture over the apricots and toss to coat. Use your fingers to break up any clumps of fruit. Add nuts to fruit, toss again and set aside.

Beat butter until soft. Add vanilla and sugar and beat until sugar is no longer grainy. Beatin eggs one at a time. On low speed add 1/3 of the dry ingredients. Add all of the applesauce. Add the rest of the dry ingredients, blend just until mixed. Stir in fruit and nuts. Turn into pan.

Bake 1 hour and 25 min, until cake tester comes clean but not dry. Cool in pan 15 min. Invert onto rack then turn back upright. Let cool to room temperature and then wrap in plastic and refrigerate before serving.
