Oatmeal Cake



  Cake:

1 cup quick cooking oats
1 1/2 cups boiling water
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup butter, softened
1 teaspoon vanilla
1 cup brown sugar
1 cup sugar
2 eggs

Coconut Pecan Frosting

1/2 cup butter
1 cup brown sugar
1 5oz can evaporated milk
8 oz flaked coconut
1 cup chopped pecans
1 teaspoon vanilla
dash salt


  Preheat oven to 350. Place oats in a bowl, pour boiling water over oats. Let stand 20 minutes. Sift flour, soda and spices. In large mixer bowl, beat butter, add vanilla and gradually add both sugars until fluffly. Add eggs one at a time. Add oatmeal and blend. Add flour mix and blend again. Pour into a greased and floured 13 x 9 pan. Use metal pan, or one that can be placed under the broiler. Bake 35 minutes or until cake springs back when touched. Frost with Coconut Pecan frosting as soon as it comes out of the oven. Place back under the broiler and broil until frosting is bubbly. Be careful, the sugar will burn very quickly.
