Pumpkin Spice Cookies



  1 cup margarine or butter
2 cups sugar
4 eggs
2 cups canned pumpkin (16 oz can)
4 cups flour
2 teaspoons baking powder
2 tablespoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon ginger
1/8 teaspoon cloves
1/8 teaspoon allspice
1 cup walnuts or pecans
1 recipe of Lemon Icing


  Beat margarine, sugar until mixed, add eggs, beat until light and creamy, Add pumpkin and spices. Stir until pumpkin is incorporated. Gradually add flour and baking powder. Stir in nuts. Drop by heaping teaspoons onto greased baking sheets. These cookies do not spread; they can be baked very close together. Bake at 350 for 10 minutes. Remove to cooling rack. When cool, ice the cookie with Lemon Icing (recipe follows)

Lemon Icing


1 cup confectioners sugar
½ tsp Lemon Extract
Lemon Juice
Yellow food coloring

Mix sugar and lemon extract together in a bowl. Add enough lemon juice to make a thin icing. Add several drops of yellow food coloring if desired. Spread on cookies and allow several hours to set.
