Creamy Dill Sauce



  3 tablespoons butter
1/2 large onion, finely minced
2 teaspoons minced garlic
4 cups vegetable stock
1 cup white wine
1/2 teaspoon dried thyme
1/2 cups dried dill
2 teaspoons lemon juice
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
2 cups sour cream


  Saute onions and garlic in butter, until translucent, do not brown. Add vegetable stock, wine, thyme, lemon juice and both peppers. Bring to boil and cook until reduced by half. Puree mixture by using a food processor or food mill. Return mixture to pan, add dill and sour cream. Return to heat, but do not allow mixture to come to a boil. Taste and add additional salt, pepper and dill as needed. Keep warm and serve over salmon.
