Blackened Grilled Venison



  1 Venison Tenderloin, cut into small medallions, about 1/2" thick
1 pound bacon,slices cut in half
1 cup whiskey or bourbon
1 cup soy sauce
1 clove fresh garlic, crushed
1 teaspoon grated fresh ginger


  Mix soy sauce, whiskey, garlic and ginger in large Ziplock bag. Add meat refrigerate and let marinate several hours up to overnight. Remove from marinade, wrap 1/2 slice bacon around meat and secure with toothpicks. Grill over med hot grill about 10 min, basting with remaining marinade. Cook until bacon begins to crisp but meat is still light pink in the middle. Do not over cook, venison dries out and becomes tough very quickly. Do not try to cook this in an oven, you must cook over a flame to burn the alcohol off.
