1/2 cup apple juice 1/4 cup bottled hoisin sauce 1 teaspoon grated fresh ginger 1/4 teaspoon salt 1/8 teaspoon cayenne pepper 2 small red, green, and/or yellow sweet peppers, cut into bite-size strips 1 medium onion, cut into thin wedges 2 tablespoons cooking oil 4 turkey breast tenderloin steaks,or cutlets cut 1/2 inch thick (about 1 pound total) 1 tablespoon cold water 2 teaspoons cornstarch 1 small apple or pear, cored and cut into wedges |

In a small bowl combine apple juice, hoisin sauce, ginger, salt, and
cayenne pepper; set aside.
In a large skillet cook sweet peppers and onion in hot oil over medium-high heat for 4 to 5 minutes or until nearly tender. Remove vegetables, reserving oil in skillet. Add turkey to skillet; cook about 4 minutes or until light brown, turning once. Return vegetables to skillet; add apple juice mixture. Bring to boiling; reduce heat. Cover and simmer for 8 to 10 minutes or until turkey is no longer pink (170 degree). Using a slotted spoon, transfer turkey and vegetables to a serving platter; cover and keep warm. In a small bowl combine water and cornstarch; stir into liquid in skillet. Cook and stir over medium heat until thickened and bubbly. Stir in apple. Cover and cook about 3 minutes more or just until the apple is slightly softened. Serve over turkey and vegetables. Makes 4 servings. |
