Turkey Soufflé
A greatway to use leftover turkey



  6 cups dry bread cubes or unseasoned stuffing mix
2 1/2 cups cooked diced turkey
2 1/2 cups shredded Swiss cheese
1/2 cup diced onion
4 eggs beaten
2 1/2 cups milk
3/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon poultry seasoning


  Place half of bread cubes in bottom of greased casserole pan. Place turkey evenly over the top of the bread. Spread cheese evenly over the turkey. Sprinkle with onions. Top with remaining bread. Mix eggs, milk and seasonings. Pour over mixture in pan. Place casserole in a pan of water and bake for 1 hour at350. Remove from water pan, and bake additional 10 minutes or until knife inserted in the middle comes outclean.
